This week's breakfast is protein banana breakfast cookies. Jen uses her favorite protein powder, Clean Simple Eats, along with walnuts, rolled oats, and mashed bananas. The process involves mixing dry ingredients, mashing bananas with an egg, and combining everything before baking at 350°F for 8-10 minutes. For lunch, Jen prepares baked meatballs served with spaghetti squash. The ingredients include ground beef, marinara sauce, and spices. After mixing the meatball ingredients, they are baked at 375°F for 25-30 minutes. The spaghetti squash is cooked in the microwave, shredded, and stored for the week. For dessert, Jen makes lemon cinnamon rolls using allulose as a sweetener. The dough is made with self-rising flour and Greek yogurt, rolled out, filled with a lemon-cinnamon mixture, and baked. A cream cheese frosting is added after baking for a delicious finish. Check out the frosting process.
